1 cup quinoa

1.Rinse the quinoa under cold water to remove any bitterness.

4.In a large bowl, combine the cooked and cooled quinoa, chickpeas, cherry tomatoes, cucumber, avocado, red onion, parsley, and spinach.

5.Pour the dressing over the salad and gently toss to combine, ensuring all the ingredients are well coated.
