Okra Soup With Millet Swallow

Okra Soup, known locally as “Draw Soup,” is a nutritious and fiber-rich Nigerian soup that can be paired with a healthy millet swallow instead of the traditional eba or pounded yam. This combination provides a balanced meal full of essential vitamins, minerals, and fiber, making it ideal for promoting digestive health and supporting longevity.

 

Ingredients:

For The Okra Soup:

2 cups fresh okra, chopped

1 cup spinach or ugu leaves, chopped

1 medium onion, chopped

1 red bell pepper, chopped

2 scotch bonnet peppers (optional, for heat)

2 tablespoons palm oil (or olive oil for a lighter option)

1/2 pound shrimp, peeled and deveined

1/2 pound beef or chicken, cut into small pieces

1 smoked fish (such as mackerel or catfish), deboned and flaked

1 teaspoon ground crayfish

1 tablespoon locust beans (iru) (optional)

Salt and pepper, to taste

Instructions

1.Wash and chop the fresh okra into small pieces.

Chop the spinach (or ugu leaves), onions, and red bell pepper.

If using, mince the scotch bonnet peppers for added heat.

Set the shrimp, beef (or chicken), and smoked fish aside for later use.

2.In a medium pot, add the beef or chicken pieces, chopped onions, and a pinch of salt.

Add a little water, just enough to cover the meat, and bring to a boil.

Reduce heat and simmer until the meat is tender, about 20-25 minutes.

Once cooked, remove the meat from the pot and set it aside, keeping the stock for the soup base.

3.In the same pot, add the palm oil (or olive oil) and heat over medium heat.

Once the oil is hot, add the chopped red bell pepper and scotch bonnet peppers (if using).

Stir-fry for about 3 minutes, allowing the flavors to release.

4.Pour the reserved meat stock into the pot along with the cooked beef or chicken.

Add the shrimp, ground crayfish, and locust beans (iru), and stir well to combine.

Allow the mixture to simmer for about 5 minutes, allowing the shrimp to cook and the flavors to meld.

5.Stir in the chopped okra, and reduce the heat slightly.

Stir the soup continuously to help the okra release its “slimy” texture, which thickens the soup.

Add the chopped spinach or ugu leaves and flaked smoked fish.

Simmer for an additional 5-7 minutes, stirring occasionally to ensure the okra and spinach are cooked through but still vibrant.

6.Taste the soup and adjust the seasoning with salt and pepper as needed.

If the soup is too thick, you can add a little water or more stock to reach your desired consistency.

7.Remove the pot from the heat once the okra and spinach are tender, and the soup has thickened.

Serve hot with millet swallow.

For The Millet Swallow:

1 cup millet flour

2 cups water

Instructions:

Prepare the Millet Swallow:

Bring 2 cups of water to a boil in a pot.

Slowly add the millet flour while stirring continuously to avoid lumps.

Reduce heat to low and continue stirring until the mixture thick.
