Recipe: Coconut Jollof Rice with a Vegetable Medley
Ingredients:
2 cups long-grain parboiled rice
1 cup vegetable stock
4 large tomatoes (blended)
2 red bell peppers (blended)
Scotch bonnet pepper (for extra heat)
1 onion (finely chopped)
2 cloves garlic (minced)
1 teaspoon thyme
1 teaspoon curry powder
1 tablespoon coconut oil
1 cup diced carrots
1 cup green peas
1/2 cup sweet corn
Salt and chicken bouillon to taste
Instructions:
Heat coconut oil in a pot over medium heat. Sauté onions and garlic until fragrant.
Add the blended tomatoes, bell peppers, thyme, and curry powder. Cook until the sauce thickens and oil separates.
Stir in the coconut milk and vegetable stock, then season with chicken bouillon and salt.
Add rice, ensuring it is evenly coated with the sauce. Cover and cook on low heat until the rice is tender and has absorbed the liquid.
In a separate pan, lightly sauté the carrots, green peas, and sweet corn until just tender.
Gently fold the vegetables into the cooked rice, ensuring even distribution.
Serve warm, garnished with fresh herbs for a festive touch.
