The holiday season is here – a time for family, love, laughter, and, of course, food. Kitchens are filled with the fragrant spices of the season, and dining rooms are ready for special meals. However, the abundance of holiday treats can make it difficult to maintain a healthy diet.

This December on CulinaryCanvas, we’re celebrating the holidays with a four-part series inspired by the “12 Days of Christmas.” Each week, I’ll share recipes and tips to help you enjoy festive flavors while staying mindful of your health. Celebrating doesn’t mean sacrificing balance—it’s about savoring every bite without guilt.

Today, we’re putting a festive twist on a Nigerian classic: Coconut Jollof Rice with a Vegetable Medley. This vibrant dish combines the flavors of coconut, fresh vegetables, and warming spices. It’s perfect for the holiday table, offering both nostalgia and nourishment.

Recipe: Coconut Jollof Rice with a Vegetable Medley

Ingredients:

2 cups long-grain parboiled rice

1 cup vegetable stock

4 large tomatoes (blended)

2 red bell peppers (blended)

Scotch bonnet pepper (for extra heat)

1 onion (finely chopped)

2 cloves garlic (minced)

1 teaspoon thyme

1 teaspoon curry powder

1 tablespoon coconut oil

1 cup diced carrots

1 cup green peas

1/2 cup sweet corn

Salt and chicken bouillon to taste

Instructions:

Heat coconut oil in a pot over medium heat. Sauté onions and garlic until fragrant.

Add the blended tomatoes, bell peppers, thyme, and curry powder. Cook until the sauce thickens and oil separates.

Stir in the coconut milk and vegetable stock, then season with chicken bouillon and salt.

Add rice, ensuring it is evenly coated with the sauce. Cover and cook on low heat until the rice is tender and has absorbed the liquid.

In a separate pan, lightly sauté the carrots, green peas, and sweet corn until just tender.

Gently fold the vegetables into the cooked rice, ensuring even distribution.

Serve warm, garnished with fresh herbs for a festive touch.

Mindful Holiday Eating Tips:

The holiday season often brings an “all-or-nothing” mindset when it comes to food. Either we indulge fully, or we restrict ourselves and feel deprived. But there’s a balance. Here are a few tips for navigating the season without compromising your health:

Savour Your Food: Take your time to enjoy each bite. Eating mindfully enhances the experience and helps prevent overeating.

Balance Your Plate: Aim to fill half your plate with vegetables, a quarter with protein, and the remaining quarter with carbs.

Stay Hydrated: With all the excitement, it’s easy to forget to drink water. Keep a glass handy to stay hydrated and support digestion.

Give Yourself Grace: It’s okay to indulge in your favorite holiday treats, just in moderation.

Health Benefits Of Key Ingredients:

Coconut Milk: A source of healthy fats that promote brain function and sustained energy.

Carrots And Green Peas: Rich in vitamins A and C, these veggies help boost immunity, protecting you from seasonal sniffles.

Rice: A great energy source, perfect for keeping up with the holiday hustle.

This Coconut Jollof Rice is not just a dish—it’s a celebration of tradition with a healthy, modern twist. It proves you can embrace the festive spirit without straying from your health goals.

Stay tuned for next week, where we’ll explore healthy holiday appetizers. Whether you’re hosting a large gathering or enjoying an intimate dinner, there are plenty of ways to make your holiday season both delicious and wholesome.

From my kitchen to yours, wishing you a season filled with joy, laughter, and incredible flavors.
